Onang Blue Bianca
If you are looking for something a little special then don't miss out on this amazing coffee from the highlands of Onang Ganjang. This coffee has been carefully managed by a young local producer in Dolok Sangul. There it undergoes a wet hulled process to bring out the natural sweetness in the cherry. With berry, citrus & grapefruit undertones this coffee finishes with a crisp bite of a traditional graham cracker.
Cherries are picked, pulped and fermented while still fresh and without water. This enahnces the sweetness & brings out the distinctive wualities in the bean. After 12 hours the cherries are hulled and parchment washed and left to dry for 2 days. The beans are then processed using wet hulling, unique to Sumatra. Finally the green beans are allowed to dry for a further 5 days after which they are hand sorted and left for a period of 30 days to rest before it makes its way to us.
